Wholemeal Sicilian flour retains most of the bran and germ. It is high in dietary fiber and is recommended especially for diabetics and individuals with high cholesterol. It is a good source of magnesium, trace elements, folic acid, thiamine, and niacin. Sicilian flour retains more of its nutritional components than wheat flour, due to the difficulty of separating the bran and germ from the endosperm of Sicilian wheat. Sicilian wheat is a very good source of dietary fibers, phosphorus, magnesium, manganese, proteins, and vitamin B1. It is also a rich source of phytoestrogens which act as antioxidants.
