White 70% durum wheat flour 1kg

The ancient grain of durum wheat with a history of 10,000 years is also known as Zeia! Characterized by an 'al dente' texture and nutty flavor, it is hearty and easy to digest. Research has shown that Zea contains 40% more magnesium than other cereals. The high levels of the amino acid lysine make pasta produced from Zea particularly digestible. A bread made from durum wheat can be included in our daily meals if paired with honey or tahini for breakfast, or incorporated into any other meal of the day as it provides maximum nutritional value.

Recipe with white 70% durum wheat bread:

Ingredients:⦁ 1000g White 70% durum wheat flour 

⦁ 1 tbsp Mesolongi Salt

⦁ 20g Fresh yeast

⦁ 600 ml lukewarm water

⦁ 2 tbsp Olive oil

Instructions:

⦁ In a large bowl, add the flour and salt, and mix. 

⦁ In a smaller bowl, dissolve the yeast in a little lukewarm water with a fork, until melted.

⦁ Pour the yeast mixture into the bowl with the flour, add the remaining water and olive oil, and start kneading with your hands until the ingredients are mixed and the flour absorbs the water.

⦁ If needed, gradually add a little more lukewarm water, kneading. 

⦁ Place the dough in a preheated oven at 50 degrees until it doubles in size.

⦁ When it doubles, remove from the oven and shape the dough as desired. 

⦁ Place the bread on a baking sheet lined with parchment paper and bake in a preheated oven at 200 degrees for the first 10 minutes and then at 190 degrees for 45-50 minutes.

 ⦁ To check if it's ready, tap the bottom of the bread with your hand. You should hear a hollow sound.
