Quinoa is a bush and belongs to the same family as beets and spinach. Its seeds come in many colors (white, red, black, blue, etc.) In recent years, quinoa seems to be a dietary supplement for many but also a main ingredient in diets for fat loss or for dealing with cholesterol, diabetes, and sugar. It is a natural source of protein, dietary fiber, and vitamins. It has a high content of iron, magnesium, phosphorus, and other trace elements and is the only natural food that contains all the essential amino acids. It is easily digestible because, by nature, it does not contain gluten. Quinoa can replace any recipe made with rice, be incorporated into soups and salads, or even used as an alternative solution to common cereals.
Usage: It should first be rinsed well to reduce its bitterness. Prepare it as you do with rice (one part quinoa to two parts water), let the water boil and add the quinoa. Then reduce the temperature, cover the pot, and let it boil for 12 - 15 minutes. Once it boils and swells, it transforms into a translucent grain.
