Maple syrup is made from the sap of maple trees. In the cold climate of Canada, where the trees grow, they store starch in their roots and trunks before winter. In early spring, for just a few weeks as it gradually darkens and becomes bitter, holes are made in the tree trunks to collect the sap in buckets.

After collection, maple syrup is heated to remove the water it contains in its natural form. Today the designation is protected, and there are grades given to distinguish their quality. Extra Light, Grade A, and Grade B. The best is Extra Light, which is the early, first harvest. Its unique characteristics include its content of manganese and zinc, and also note that two teaspoons of it yield 34 calories.

Maple syrup is a healthy sweetener, rich in nutrients, which pairs well with muesli, drinks, puddings, desserts, yogurts, etc. The difference from honey is that when heated, it does not lose its valuable nutrients.
