Dinkel is a variety of wheat known for its high nutritional value. Dinkel has high water solubility, making its nutrients easily absorbed by the body. It belongs to the same genus as common wheat but differs in having 21 chromosomes (compared to 42 in common wheat) and distinct natural & nutritional characteristics setting it apart. Dinkel contains special carbohydrates that act as important blood clotting agents, boost the body's immune system, and help increase its resistance to infections. It is also a wonderful source of fiber and rich in complex B vitamins. Its total protein content is 10 to 25% higher than common wheat varieties.
