Risotto with black beans and mushrooms

onions, a large clove of garlic, a clove of portobello or cremini mushrooms, half a kilo of green and red peppers, brown rice ALL ORGANIC, 2 cups of black beans ALL ORGANIC, cooked, whole, 2 cups of frozen corn, a cup of rosemary ALL ORGANIC, 2 teaspoons marjoram ALL ORGANIC, 1 tablespoon of bean broth (or vegetable broth) at least 6 cups. We finely chop the onion and garlic, cut the peppers and mushrooms into thick slices.

Sauté (over medium to high heat, e.g., 6/9) in a little water (2-3 tbsp) the onion for 3-4 minutes, then add the garlic, mushrooms, peppers, and sauté until the mushrooms soften. Add the brown rice and stir for another minute. Add the beans, half of the broth, the corn, herbs, and reduce the heat to 3-4. Cook for about 40 minutes gradually adding as much broth as needed to keep the ingredients covered. Stir gently with a wooden spatula, just enough to make sure that the rice does not stick to the bottom.
